You guys — something miraculous happened the other day. After sharing my mandarin Madeleine cookie recipe on Instagram, someone commented and asked when I would be sharing more SALADS. This was seriously a first for me, friends. But it totally inspired me and lit a fire under my butt — so here we have it. Greens, veggies, and just a littttttle bit extra.
I had so much fun throwing this salad together, because it really is insanely simple but has an elevated feel to it. While diving in to eat it, it’s one of those lunches that I realized I would be STOKED to order at a restaurant. The best part is, it’s super affordable and you can prepare it in less than 10 minutes. I find that afternoons can be easily overlooked and underrated. There’s something incredibly sacred about being intentional about cultivating an experience for ourselves, and that’s what food can do. Whether you want to show yourself some love or impress a friend for a lunch date, this salad will take you from sweat pants & ordinary to upscale and EXTRA.
Have fun with this salad — that’s the most important part. Find the joy and soak it up on some French bread.
What you need:
— sliced French baguette (you can find my recipe here)
— 3 cups of shredded mix: kale, Brussels sprouts, cauliflower and spinach
— 1/4 cup sliced kalaman olives
— 1/4 cup sliced heirloom cherry tomatoes (or any kind of tomato if you have a seasonal preference)
— 1/4 cup shredded marinated artichokes (you can find these at Trader Joe’s or most grocery stores)
— 1/4 cup cooked brown lentils (gotta get that protein!)
— a few sprigs of fresh mint
— 1 tbsp olive oil
— 1 tbsp apple cider vinegar
— touch of lemon juice
— sea salt and pepper to taste
What to do:
1. After all of your ingredients have been sliced and diced, toss them in with your shredded greens mix in a medium sized bowl.
2. In a small bowl, combine your olive oil, apple cider vinegar, sea salt and pepper. Mix well and toss fully into your salad.
3. Cut 4 thin slices of your French baguette and toast them lightly.
4. Serve your salad in small bowls with your adorable little toast points sticking out to say hello.
