As a photographer in the midst of wedding season, snacks are crucial to my survival. No seriously — trust me — you don’t want to see me hangry. Living with chronic illness and running my own business, it’s incredibly important for me to take care of my body, which is easier said than done sometimes.
That’s what I love about these little balls of energy. They took me 5 minutes to prep, and now I have grab & go bites for the week. With 5g of protein per bite, these puppies will give you the boost you need to be a lady boss (until nap time, that is).
Oatmeal raisin has always held a special place in my heart. It’s like taking grandmother’s house with you on the go. And did I mention they are vegan & gluten-free?! Get on this. Grandma will thank you for it.
What you need:
1/2 cup creamy unsalted almond butter (I love Trader Joe’s raw brand!)
3 Tbsp organic maple syrup
1 1/4 cup gluten-free rolled oats (another thing they have at Trader Joe’s which I have been loving!)
2 1/2 Tbsp flaxseed meal
2 Tbsp chia seeds
1 Tbsp maca powder
2 Tbsp unsweetened coconut flakes
2 Tbsp raisins
Combine all of your ingredients and mix well in a bowl. Let that mixture set in the fridge for about 10 minutes. Take them out and roll into small Tbsp sized balls (should make about 13-15). Seal them up and keep in the fridge for up to a week, but I doubt they’ll last you that long.
