The incredible Brian got me a spiralizer for my birthday, and I think it’s safe to say I’ve been having a little too much fun turning my veggies into noodles. This recipe is perfect for anyone who is vegan, gluten free, paleo, or just looking for a clean, healthy dinner. With my various health challenges, it has been so refreshing to be able to get creative and have fun in the kitchen again without feeling so limited. Even better: it’s super quick, easy, and affordable. It’s also easily customizable and you can dress it up with spices, herbs, and more.
