The kitchen is probably my favorite place in the new home that I will soon share with my almost husband.
I love sitting in the living room, smelling the fragrant aromas coming from the oven as I look into the kitchen…
And there’s nothing better than being able to cook something wonderful while being able to look out over the rest of the home…
Today, I am going to share a recipe with you that is so easy and so delicious. This is the first dinner I cooked for my fiancé in our new home. Enjoy! 🙂
Lemon Basil Chicken Breasts {Slow cooked in garlic & white wine}
(This recipe is for 2 servings)
Ingredients:
2 boneless, skinless chicken breasts (I used the “Simple Truth” organic chicken-it was great!)
1 tsp. minced garlic
1 Tbsp. grated lemon rind
Salt to taste
Pepper to taste
1/2 cup dry white cooking wine
1 Tbsp. chopped fresh basil
1 Roma tomato, diced
Instructions:
1. Place chicken in your crock pot/slow cooker (I recommend always greasing your slow cooker with some olive oil prior to cooking to avoid burning.)
2. In a bowl, mix the garlic, lemon rind, salt and pepper, and white wine. Pour this mixture evenly over your chicken.
3. Cover and cook on high for 3 hours. Stir in the fresh basil and tomato just before serving.
Side Spinach Avocado Salad:
-Dressing: combine 2 tbsp. olive oil with the lemon juice from your previous lemon. Add salt and pepper to taste.
-In a bowl, toss 2 cups of spinach with one sliced avocado. Add your dressing and continue to toss.
We also took my dog for a walk that night to the market right across the street where my fiancé got some fresh whole wheat rolls to add to our dinner.
